My favorite thing since I went vegan last week is all the yummy, whole foods I’m enjoying. Avoiding animal products forces me to try new things, most of which are deliciously nourishing!
Breakfast was quick as I was running out the door to get some work done on my car… the last of my iffy homemade waffles with Smart Balance and jam!
David was home for a rainy day lunch. I wanted something nourishing and homely- black beans and brown rice with tons of veggies!
Yummy. More Whole Fruit Sorbet for dessert :) Yum! Served with a side of GoLean Crunch…
Unpictured snacks: tons of GoLean Crunch!! Ahhhh!!!
Grilled veggies and sweet potatoes on the menu for dinner. Fantastic.
I didn’t feel hungry at all but enjoyed every bite!
David came home from work to dinner on the table… served with a side of fresh-brewed mint tea!
And a late night dessert of more sorbet, cereal and fresh cherries :)
Coming soon: My opinions on the vegan diet and how it’s changed me.

I'd say that pic of you on the couch is whole and yummy. You seem to be very at home in orlando with David. Good for you! You're stepping out of your comfort zone on multiple levels, and that isn't easy.
that asparagus looks fabulous! glad the vegan transition has been going so well for you!
(((hugs)) for Dixie!
(do you have the ability to change how I can comment? there isn't the name/url option below and all the other options yell at me!) ;(
There's nothing better than eating healthy. I have survived a day w/o binging and my body is loving not having to process crap.
I have an awesome vegan chocolate cake recipe if you want it :)
Looks like you're finding plenty of tasty things to eat with your new lifestyle. Great job!
Your dinner looks great! That frog tea thing is so adorable :D I'm glad the vegan diet is working so well for you.
you seem to be absolutely THRIVING on your vegan diet! i am so happy for you! i cant wait till the next post now :) you've got me intrigued.... oh man
Your dog is totally adorable. I have two cats now, and I can't wait to get a dog to complete my little "family." They are my children. :)
I'm glad the vegan transation is going well. I would have a horrible time with that!
Sounds like this is working well for you! I'm excited to hear more of your thoughts.
I am loving all of those eats!! Can't wait to hear your review :)
PUPPY!!! Love her!
Oh I felt the same way when i was dabbling in the vegan diet! I also had to get more creative and really opened my eyes to new combinations & foods, meals & snacks.
Hey Ashley!
Thanks for commenting- at least we get the kick is right! In the winter I'll be searching all over for it.
I love your blog- sweet design & good eats!

Hi Ashley! Somehow even though I try to read all of your posts, I don't think I realized that you had gone vegan.
Is this a temporary "try-out" or a permanent lifestyle change? I am trying to go raw, which means I'm basically eating vegan too! Yay for veganism :-)
Also, I am having a Holey Donuts giveaway on my blog until next Wednesday if you are interested!
I'm definitely envious of you for trying out the vegan thing. I'm such a dairy addict that I KNOW I couldn't do it at this point in my life but maybe some day... for a week experiment perhaps? Haha. I like the aspect of having to try all kinds of new foods! I'm excited to hear more about how it's working out for you :)
Love all the colors!
Your pups looks like mine...only younger ;) What's her mix?
So awesome about your decision to go vegan and that you are loving it! Keep inspiring us! ;-)
@kellyolexa
where is the frog tea cup from?!?!?
sooo cute!
