Commandments

- Value my body.

- Don't waste calories. Eat wholesome foods that make me feel great.

- Say "No" once in a while

-Make a game plan before tough situations.

- Run! Train for first full marathon!

- Some sort of exercise every day.

Vegan Newbie

I don’t normally post my meals so I’m not used to wanting my meals to be awesome for you all to see! It’s a good kind of peer pressure :)

I wish my first vegan meal post would be more interesting but we are low on groceries and I am unemployed… so I’m working with what I’ve got!

IMG_5043

I started the morning off with vegan cinnamon-flax waffles.

IMG_5044

They were gross- otherwise I’d share the recipe. Next time I will use less whole wheat flour.

IMG_5045

But I ate a huge one anyway (see above: unemployed) with some Smart Balance and maple syrup.

IMG_5046 IMG_5049

A few hours after breakfast I headed out for a 4.3 mile walk/run (it was too hot to run!) and came home to some strength and stretching.

IMG_5050

Workout followed by two spoonfuls of Sabra Roasted Pine Nut Hummus (review: AMAZING!!!) and some fresh watermelon straight from the bag.

IMG_5051

Lunch was a spring mix salad with black beans, carrots, red onion, ginger dressing and BacUns. Plus another 1/2 waffle in effort to finish the batch (with Smart Blance and all-fruit jam).

IMG_5052

Yum!

IMG_5054

Afternoon snack included a few handfuls of Kashi GoLean…

IMG_5055

…and fresh strawberries and cherries!

 IMG_5057

Dinner was sweet potato fries (with sunflower oil, paprika, hot sauce, Country Bobs and garlic salt) and a mix of endamame, corn, peas and black beans over fresh spinach.

IMG_5061

So satisfying! I am itching for something sweet; maybe I’ll have a banana and PB now :)

IMG_5063

There’s one simple, satisfying and healthy vegan day. See you tomorrow!

hey from a fellow vegan (5 years and going!)...8th continent soymilk isn't vegan :( the vitamin d it contains is derived from animal. you may or may not be worried about that, but just thought i'd let you know!

Great job on becoming Vegan. I am vegetarian and have considered becoming vegan, but I'm not ready yet...

Even though you say your waffles were gross, they still look good to me! ; )

  11. Anna on July 8, 2009 8:42 AM

Nice! I did a vegan week a couple months ago and loooooved it. I couldn't believe how satisfied I felt, and how I had zero stomach issues!

  12. bHealthier on July 8, 2009 9:22 AM

That waffle looked amazing, too bad the taste was off!

After trying it a few months ago, I can literally not stand to buy any other brand. Two days ago I just made my mom buy it also. I seriously think its liquid crack.

congrats on a successful vegan day!

  13. Carolina John on July 8, 2009 9:25 AM

right now all of the gardens (including mine) are getting flush with veggies. so hit the farmers markets and get all the good stuff while it's here and cheap!

this is a great time of year to eat vegetarian.

  14. pursuingbalance on July 8, 2009 9:44 AM

Congrats on going vegan! I'm vegan too. My doctor always tests my B12, B6, and iron levels and they are all A-ok! Also, I recently had a bone density scan and my bones are actually stronger than they were before I was vegan!

  15. Stacey on July 8, 2009 9:44 AM

Mmm I love Sabra hummus too :) Aww look at Dixie in the background, hehe :) Looks like some good eatin there girlie!
